Sam’s Bruschetta Pasta:
The Sauce:
Ingredients:
- 1 can diced tomatoes, drained or 1 pint fresh, cherry tomatoes, diced
- ¼ cup extra-virgin olive oil
- 4 cloves garlic, minced
- Handful fresh basil, chopped
- Salt and pepper
Method: For the sauce, combine tomatoes, olive oil, garlic, basil, salt, and pepper in a medium bowl. Let sit on the counter for 15-25 minutes
The Chicken:
Ingredients:
- .75 lb boneless, skinless chicken breasts
- 1 tablespoon Italian seasoning
- Salt and pepper
- 1 tablespoon Extra-virgin olive oil
Method: Sprinkle Italian seasoning, salt, and pepper on both sides of the chicken. Heat the olive oil in a skillet to medium heat. Cook chicken until cooked through (time will depend on the thickness of the breast; should reach 165 degrees celsius). Let rest for 5 minutes, then slice into thin pieces.
The pasta
Ingredients:
- 1 lb box of angel hair pasta
- Salt if desired
- Parmesan Cheese
Method: In the meantime, cook angel hair pasta according to package instructions. Drain pasta and put in a large serving bowl. Add sauce and chicken; stir to combine. Sprinkle with parmesan cheese. Serve and enjoy!
